This cut is very popular in Asia, with delicious dishes prepared in both Japan and China. Pork belly is a frequent component in many different types of cuisine across the world due to its versatility and availability.
How to cook your Pork Belly like a pro
There are two main ways to oven-cook your pork belly; skin-on and skin-off.
For roasting pork belly skin on, start by scoring the skin in a series of 12-inch-diameter slashes after patting it dry with a paper towel (make sure to use a sharp knife). To get a diamond pattern, repeat this cutting in the opposite way. Make sure to just make shallow cuts; while it's OK to cut into the fat, avoid doing so at the expense of the meat.
Next, either using your scored skin-on or untouched skin-off pork belly, use a dry rub of sugar, salt, and pepper to season a one-pound piece and cover overnight in the refrigerator.
Roast the next day for the first 30 minutes at 230°C (450°F) on the middle rack, and then for an additional hour at 135°C (275°F).
Take out of the oven, then allow it cool to room temperature. Wrap your pork belly in cling film firmly and place it in the fridge for at least a few hours and up to two days to get it completely cold.
Once cooled, cut into thick slices and fry until crispy to eat on their own or in a variety of dishes, such as sandwiches, salads and even soups!
